mmmm...satay salad....

This is utterly random, but I love love love this recipe. Trade the greens for pasta and it's almost to die for.

Satay chicken salad
Preparation time 15 minutes Makes 4 to 6 servings

3 tbsp lime juice
1/4 cup peanut butter
1/2 cup bottled honey-Dijon salad dressing (PC brand is the best, and don't bother getting the low fat stuff)
1/2 to 1 tsp hot red chili flakes
1 deli-roasted chicken or 4 cups sliced cooked chicken (I think it's best with grilled chicken breast)
1 red pepper
1/2 English cucumber
1/4 large red onion
12 cups mesclun greens (like I said - use pasta in place of the greens and it's REALLY good)
1/4 cup chopped fresh cilantro or basil (I suggest cilantro)
1/4 cup chopped roasted peanuts or almonds (I suggest peanuts)

1. Squeeze lime juice into a very large bowl. Whisk in peanut butter, salad dressing and chili flakes.

2. Discard chicken skin. Tear chicken into strips and add to dressing. Thinly slice pepper. Slice cucumber lengthwise into quarters. Scrape out and discard seeds. Coarsely chop. Thinly slice onion. Add all to dressing with mesclun greens (or pasta) and cilantro. Toss to evenly coat. Sprinkle with nuts.

MMMMMM!!!!!
