7-layer tortilla pie

From time to time, I'm inspired by something I eat, and I want to share it. This recipe came from my friend, Katie, and is SCRUMPTIOUS. It's also healthy, which is a bonus. And it's vegetarian, which is a double bonus for some of you!

7 Layer Tortilla Pie

2 (15 oz) cans of pinto beans (drained and rinsed) or refried beans
1 cup salsa, divided
2 cloves garlic, minced
2 Tbsp fresh cilantro, chopped
1 (15 oz) can black beans, drained and rinsed
1/2 cup chopped tomatoes
1 cup frozen corn
7 (8 inch) tortillas
2 cups cheddar cheese, grated
sour cream

Preheat oven to 400 F. In a large bowl, mash pinto beans, (or don't if you're using refried beans), and stir in 3/4 cups salsa and the garlic. In another bowl, combine 1/4 cup salsa, cilantro, black beans, tomatoes and corn.

Place 1 tortilla in a pie dish, and spread 3/4 cup pinto bean mixture over tortilla to within 1/2 inch of edge. Top with 1/4 cup cheese, and cover with another tortilla. Spread with 2/3 cup black bean mixture, and top with 1/4 cup cheese. Repeat layering twice. Cover with remaining tortilla, and spread with remaining pinto bean mixture and cheese.

Cover with foil and bake for about 40 mins. Cut into wedges and serve with sour cream.

DELICIOUS!!!
